No Oil Zucchini Muffins

Substitute the grated zucchini with grated apples or carrots. You could also add ⅓ cup of raisins or nuts.

Ingredients
Dry Ingredients
  • ½ cup all-purpose flour
  • 1¼ cups whole wheat flour
  • ¼ cup wheat germ (if you don't have it just add another ¼ cup more of flour)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons of cinnamon
  • ½ teaspoon salt
Wet Ingredients
  • 2 tablespoons of flax egg (whisk 2 tablespoons of ground flax with 5 tablespoons of water. Place in refrigerator for 15 minutes to thicken)
  • ⅓ cup organic apple sauce
  • ⅓ cup organic maple syrup
  • ½ cup non-dairy, unflavored milk
  • 1½ teaspoons vanilla extract
  • 1 cup grated zucchini
Topping
  • 1 tablespoons of oats
  • 1 teaspoon of maple sugar
  • 1 teaspoon of cinnamon
Instructions
  1. Pre-heat oven to 360 degrees F
  2. Sift together all the dry ingredients.
  3. Combine all the wet ingredients.
  4. Add the wet ingredients to the dry ingredients and stir gently but thoroughly until absorbed.
  5. Lightly grease a muffin pan. Fill the muffin cups ¾ high with the muffin mix.
  6. In a small dish combine the topping ingredients.
  7. Top each muffin with a sprinkle of topping.
  8. Bake for 40-55 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool for approximately 15 minutes.
